Peppers Calstock serves a three course set menu dinner available by prior appointment only for in-house guests. This gastronomic journey features local seasonal ingredients and an exquisite international wine list (minimum 48 hours notice required).

Chef Profile - Stuart Godfrey

Stuart is a Tasmanian who has worked in various states of Australia and boasts extensive fine dining experience. He is passionate about food and the quality he delivers, he is extremely personable and enjoys interacting with guests to create a total dining experience.

"My plan is to return home to my favorite state after just over a decade of being away. I will bring back with me all the culinary experiences and teachings that I've learnt from some great chefs that I've had the pleasure working with and using ingredients that I believe are some of the best and freshest available in Australia.

The inspiration for me for taking on this role is the fact I will get the opportunity to get out and meet the people who grow my vegetables, who are making the cheese, who are breeding the meat and the fish, seeing where it all comes from and the whole process behind it all, instead of it just being delivered through a loading dock or back door.

Working with local producers and the little boutique outlets that only specialize in one thing, you know the quality is foremost and the heart of that person has gone into making the product. I then get the opportunity to turn their product into something great and not being confined to a fluro lit white tiled wall room all day is a big bonus. I am also inspired by the opportunity to have personal interaction with the guests."
